Honest safety note. Microgreens are food, not medicine. Brassica varieties (radish, broccoli, mustard, pak choi, kale, red cabbage, mizuna) contain goitrogens - fine in normal amounts, but talk to your doctor if you have a thyroid condition. Amaranth, beetroot, and buckwheat contain oxalates - moderate your intake if you are prone to kidney stones. Always rinse before eating. Refrigerate at 4C. Best within 5-7 days of harvest.
